BANANA FLAXSEED PANCAKES
We love tradition, and Sunday morning pancakes are such a wonderful way to really plug in to the togetherness of family time. Here at Eat For Baby, we are on a quest to provide all of our favourite dishes, while making them healthier and more nutritious for our bodies and our babies bodies.
With pancakes being a weekend favourite, we set out to change this simple breakfast into something extraordinary.
Healthy, easy to cook, packed with nutrition, and absolutely delicious, we think we have finally nailed it with these Banana Flaxseed Pancakes. Give them a go, and let us know what you think!
1/2 tsp Vanilla Extract
1 cup Milk (as per your preference)
3 tbsp Pure Maple Syrup
1 Banana mashed
1 cup Self-Raising Flour
1/2 tsp Baking Powder
2 tbsp Flaxseed Meal (Ground Linseeds)
1 cup Finely Processed Oats (or Oat Bran)
Butter for greasing frypan
1 cup Mixed Frozen / Fresh Berries to serve
Whisk 2 eggs in a mixer, or by hand, until pale and fluffy. Add 1/2 tsp vanilla, 1 cup milk, 3 tbsp maple syrup, and 1 mashed banana to the egg mix and stir until just combined.
Add 1 cup SR flour, ½ tsp baking powder, 2 tbsp flaxseed and 1 cup oats to the liquid mixture and whisk until all ingredients are combined and at a smooth consistency. Add a little more milk at this stage if the mix seems too thick.
Heat a little butter in a frypan at a low-medium heat. Spoon mixture into rounds and cook for ~2 minutes each side.
Meanwhile, in a saucepan over a medium heat, warm 1 cup of frozen berries with 4 tablespoons of water. Berries are ready to serve once soft, ~5 minutes.
Serve pancakes with maple syrup and mixed berries!
Makes 3-4 servings.
