CHOCOLATE DATE BALLS
These fudgy, chocolatey, delicious little balls of bliss are the perfect treat. Refined sugar free, they are naturally sweetened thanks to their base of dried dates, as well as being gluten free and vegan! Not a bad treat to have when those chocolate cravings get too much to bear.
Cocoa is a powerful antioxidant, helping to eliminate free radicals from your body and even assist in wound healing, which can be particularly helpful after birth.
We have included flaxseed and chia seeds in this recipe to bump up your fibre and omega 3 goals for the day, and rolled them in chewy desiccated coconut which is incredibly nutrient dense and delicious. We've used dried dates to keep these balls cost effective.
Chocolate Date Balls
150g pitted Dried Dates
1 tbsp Chia Seeds
½ tsp Baking Powder
½ cup Desiccated Coconut (plus extra for rolling)
1 tbsp Flaxseed Meal
2-3 tbsp pure Cocoa powder
Soak your dates and chia seeds in a mix of boiling water and baking powder for 10-15 minutes. Drain off the fluid. Add the dates, ¼ cup of coconut, 1 tbsp flaxseed, and 2-3 tbs cocoa (stick to 2 tbs if you like a sweeter taste) to a food processor and blitz until smooth and creamy.
Fold in the remaining ¼ cup of coconut, and roll the mixture into 12 balls. It is easier to roll if you use wet hands. If the mixture is too wet/dry, you can add a little extra coconut or some water until you have a rolling texture.
Roll the chocolate date balls in your extra coconut (or try cocoa, crushed walnuts, or chocolate sprinkles!) and refrigerate for at least 30 minutes.
